I’m a firm believer that peanut lime sauce makes anything better, and this easy peanut noodle bowl is no exception. This peanut noodle bowl is the perfect mix of crunchy, fresh veggies, a flavorful sauce, and delicious buckwheat noodles, coming together to make one of the easiest under 15-minute meals I can think of. Bonus- you can use pretty much any fresh or frozen veggies you have on hand, meaning it’s a super versatile meal.
I first made this peanut noodle bowl about a year ago when I was living through a Toronto summer and needed a recipe that was hearty, nutritious and delicious, but that wouldn’t require me standing over the stove or oven in forty-degree heat (Celcius). All of the components of this peanut noodle bowl can be made with just some boiling water (and you can even use a kettle), and the dish can be served either hot or cold. One of my biggest pet peeves, when I was in school, was having to wait to use the microwave to heat lunch, which isn’t necessary with this bowl.
The superstar of this dish is the peanut lime sauce, which is a heavenly combination of savory from the peanut butter, tangy from the lime juice, sweet from some dates or maple syrup, and spicy with the (optional) sriracha. Find the recipe for this sauce in my FREE Easy Vegan Sauces ebook!
If you’re looking for a quick and easy vegan lunch to add to your lunchbox, or to add to your weekly dinner rotation, then this peanut noodle bowl is the one for you! This can also be made kid-friendly by making sure the veggies and noodles are cut to an appropriate size and replacing the peanut butter with tahini if your child’s school is peanut-free!
Easy Peanut Noodle Bowl
Ingredients
- 1/4 packet buckwheat noodles
- 1/2 cup edamame
- 1 serving peanut lime sauce Get in my free easy vegan sauces ebook
- 2 carrots grated
- 1/2 cucumber grated
- sesame seeds optional
Instructions
- Put 1.5 L of water in the kettle to boil
- Meanwhile, whisk together all ingredients for peanut lime dressing (see note above about getting peanut lime dressing)
- Once water has boiled, add edamame and buckwheat noodles to a large bowl and pour water over noodles and edamame. Let sit for about 5 minutes, or until cooked through
- Meanwhile, grate carrots, cucumber and whatever other veggies you like
- Drain and rinse edamame and buckwheat noodles
- Combine buckwheat noodles, peanut lime sauce and veggies in a bowl and stir to combine. Top with sesame seeds if desired
