Summer is almost here in Toronto, which means that I’m starting to crave cold food pretty much exclusively. Bring on all the sandwiches, dips, hearty salads, and cold noodle bowl recipes like this Miso Florida Orange Juice Noodles Recipe!
I love this noodle recipe because it comes together in just twenty minutes flat, making it the perfect weeknight staple recipe. I also love that it doesn’t require the oven, meaning my kitchen won’t get unbearably hot. That’s a win-win situation in my books! If you’re looking for a quick and easy summer recipe for those busy nights when cooking is the last thing you feel like doing, this is it.
Most of the time when I’m putting together a meal, I like to make sure there’s a good source of plant-based protein, healthy fats, energizing carbohydrates, and a dose of vegetables or fruit to keep me feeling full, nourished and satisfied. With all that being said, it’s the most important that our food is delicious, because that plays a huge part in feeling satisfied from our meals. These Miso Florida Orange Juice Noodles definitely check all of those boxes. We’ve got the edamame for plant-based protein, tahini for healthy fats, Florida Orange Juice and rice noodles for energizing carbohydrates, and the orange juice, purple cabbage, and carrots for veggies!
Key Ingredients for the Miso Orange Juice Noodles
Florida OJ: I love using 100% orange juice in my recipes because it adds a natural sweetness and citrus tang. 100% orange juice is also a great source of vitamin C, which helps to increase the absorption of plant-based iron. It’s also a good source of potassium and contains folate and thiamine and has no added sugar!
Edamame: An excellent source of plant-based protein, calcium, and iron. As mentioned, the plant-based (non-heme) iron is more readily absorbed by the vitamin C in the orange juice! I love using edamame as a source of protein in my meals because it can be bought shelled and frozen, meaning it can easily be added directly to dishes for a protein boost!
Miso paste: Miso paste adds an umami-flavor punch and is a great source of probiotics.
Tahini: A great source of healthy fats, calcium, and iron!

Miso Florida Orange Juice Noodles Recipe
Ingredients
- 1 cup shelled edamame
- 2 cups thinly sliced cabbage
- 1 cup thinly sliced cucumber I used a peeler to make strips
- 1 cup thinly sliced carrot I used a peeler to make strips
- 300 grams rice noodles can substitute buckwheat noodles
For the Sauce
- 1/4 cup tahini
- 2 tbsp miso paste
- 1 tbsp minced ginger
- 1/2 cup Florida Orange Juice
- 1 tbsp rice vinegar
- 1 tsp sesame oil
Instructions
- Cook edamame as per package instructions. I typically microwave in a small bowl with a few tbsp of water for 2-3 minutes until tender.
- Whisk all ingredients for the sauce together and set aside.
- Bring a large pot of water to a boil. Cook noodles as per package instructions.
- Once noodles are cooked, rinse with cold water. Add all ingredients to a large bowl to combine. Serve and enjoy!
