With everything going on with COVID-19, and many of us in self-isolation or quarantine, I thought now would be a good time to share a roundup of my favorite easy vegan pantry recipes! All of these recipes rely on pantry staples like beans, lentils, other legumes, brown rice, canned tomatoes, coconut milk, pasta, dried spices, vegetable stock, and frozen vegetables. Some may also use common root vegetables that stay fresh for a while, like potatoes, carrots, and celery.
