This 30-minute Vegan Sausage Sweet Potato & Brussel Sprouts Sheet Pan Meal with Creamy Maple Dijon Dressing may sound fancy, but it comes together so quickly and is the perfect balance of protein, fiber and veggies! Simply add the main ingredients to your sheet pan and roast for 25 minutes while you whip up the Creamy Maple Dijon Dressing. Drizzle on top of your vegan sausage and roasted veggies for the easiest dinner ever!

Friends, if you’ve never tried a sheet pan meal, you’re seriously missing out.
Sheet pan meals are some of my favorite easy main dishes because they’re sooo easy to make, have a great diversity of protein, carbs, and veggies (which you know I love as a Registered Dietitian!), and did I mention they can be absolutely DELICIOUS?!
And this sweet potato and brussel sprout sheet pan meal is no exception! We use spicy Italian (vegan!) sausage, cubed sweet potato and brussel sprouts as the base and roast them all together until they’re fragrant, golden brown and delicious. We drizzle over my delicious Creamy Maple Dijon Dressing for even more flavor and are left with the absolute perfect 30 minute meal. So let’s get to it!

Time to get everything ready for the easiest sweet potato sheet pan dinner every!
Vegan Sausage: I used Beyond Meat Hot Italian Sausage and love the flavor it brings, but feel free to use whatever you like best! Obviously, if you eat meat, you can use regular sausage instead.

Brussel Sprouts: As a delicious veggie!
Seasonings: Like garlic powder, rosemary, salt and pepper.
Creamy Maple Dijon Dressing: This creamy sauce completely elevates this sheet pan meal since it’s SO packed with flavor, and incredibly easy to make!
Don’t have any vegan sausage on hand? Not to worry, because my Crispy Rosemary Thyme Baked Tofu also works perfectly in this recipe! Simply follow the recipe to season the Rosemary Thyme Tofu, and add it to the pan at the beginning of baking rather than half way through!
Let’s Make A Sausage Sweet Potato Sheet Pan Meal!
Time to cook! And this really couldn’t be easier.
- Preheat your oven to 450 F. Line a baking sheet with parchment paper.
- In a large bowl, toss to combine your chopped sweet potato, brussel sprouts, olive oil, garlic powder, rosemary, salt and pepper. Leave your sliced sausage to the side
- Lay evenly on the sheet pan and roast for 12 minutes. Remove from the oven, flip the sweet potato and brussel sprouts, add your sliced sausage to the sheet pan, and roast for another 12 minutes, or until the sweet potatoes are fork tender.
- Meanwhile, whisk together the Creamy Maple Dijon Dressing.
- Once the sheet pan sausage and veggies are done, remove from the oven and plate! Drizzle the dressing on top and enjoy!

Ingredients
- 350 g brussel sprouts quartered
- 1 large sweet potato diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp chili flakes
- 1/4 tsp salt
- 1 tsp dried rosemary
- 1/4 tsp pepper
- 2 vegan sausages sliced into rounds
- 1 batch Creamy Dijon Maple Dressing
Instructions
- Preheat your oven to 450 F. Line a baking sheet with parchment paper.
- In a large bowl, toss to combine your chopped sweet potato, brussel sprouts, olive oil, garlic powder, rosemary, salt and pepper. Leave your sliced sausage to the side (we'll add them half way through cooking!).350 g brussel sprouts, 1 large sweet potato, 1 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp chili flakes, 1/4 tsp salt, 1 tsp dried rosemary, 1/4 tsp pepper
- Lay the sweet potato and brussel sprouts evenly on the sheet pan and roast for 12 minutes. Remove from the oven, flip the sweet potato and brussel sprouts, add your sliced sausage to the sheet pan, and roast for another 12 minutes, or until the sweet potatoes are fork tender.2 vegan sausages
- Meanwhile, whisk together the Creamy Maple Dijon Dressing.1 batch Creamy Dijon Maple Dressing
- Once the sheet pan sausage and veggies are done, remove from the oven and plate! Drizzle about 1-2 tbsp of the dressing on top and enjoy!
