This Coconut Berry Chia Pudding with Timeline Nutrition is packed with plant-based protein, healthy fats, fiber and cell-regenerating action from Mitopure!
Chia pudding is one of my all time favorite breakfasts and snacks because of how easy it is to make, how nutritious it is, and how customizable it can be! It also only takes 5 minutes of active time to make.
Not only is this Coconut Berry Chia Pudding nutritious and delicious, it’s also packed with cell-regenerating action! As we age our mitochondria (or the powerhouse of the cell, if you remember from biology class!) aren’t able to regenerate as effectively, meaning our muscles can become weaker and take longer to recover from workouts. As someone who runs a lot, this is of particular interest to me!
For some people, eating certain nuts, seeds and pomegranate can help turn on the process to more effectively repair our Mitochondria, but about 70% of us don’t get those benefits. How to make this chia pudding
- Combine the Mitopure, coconut milk, berries, maple syrup and vanilla extract to a high speed blender and blend until smoothie.
- Add the chia seeds to the blended mixture and stir well to combine. Place in the fridge for 10 minutes, then stir again until well-combined. This step is necessary to prevent any clumps from forming. Let sit in the fridge for at least 4 hours, but ideally 8 hours to set. Serve and enjoy!
What berries can I use for this Chia Pudding?
I used frozen mixed berries for this chia pudding, but feel free to use whatever you have on hand! Frozen berries are great because they’re just as nutritious as fresh but often less expensive.
How long does this chia pudding really need to set?
I recommend letting this chia pudding set for 4-8 hours so you get a true, pudding-like consistency. With that being said, the chia seeds will start to gel up after about 30 minutes, so if you don’t mind it not being super thick, you can eat it then!
What milk should I use for this chia pudding?
I used soy milk for this berry chia pudding since it has 8 grams of protein per cup, making it a more well-balanced addition! Feel free to use any kind of plant-based milk you prefer, though.
Recipe Notes
- To make the chia pudding layered like it is in the photos, whisk together the chia seeds, coconut milk, maple syrup and vanilla extract. Place in the fridge for 10 minutes, then whisk together again and refrigerate for at least 4 hours. Blend together the berries and Mitopure with a splash of plant-based milk until smooth- The mixture will be thick. Set aside in the fridge. Once the chia pudding has set, layer it with the blended berry mixture, serve and enjoy!
- If you’d like a thicker chia pudding, use more chia seeds. If you’d prefer a thinner consistency, use less chia seeds.
- I used maple syrup in this recipe for sweetness, but feel free to swap with any sweetener you like!
Storing leftovers
Refrigerate leftovers in a mason jar or air tight container for up to three days.
