Nothing screams summer like barbecuing, and just because you may be vegetarian, vegan or wanting to eat more plant-based doesn’t mean you can’t get in on the summer BBQ fun, and these Pineapple BBQ Tofu Skewers will help you do just that!
I love barbecuing because it’s seriously so quick and easy, plus it means less dishes have to be cleaned after cooking, which is always a win in my books. When I first went vegetarian then eventually vegan, I was at a bit of a loss of what to bring to barbecues with family and friends. There were a few veggie burger options, but none that were noteworthy enough to introduce to my friends and family! I started relying more heavily on homemade options like black bean burgers, and tofu veggie skewers!
I know not everyone is a huge fan of tofu, but trust me, these will change your mind. The biggest mistake I see people making when cooking tofu is not flavoring it properly and not cooking it long enough, so I made sure these pineapple BBQ tofu skewers were packed with flavor, and the barbecuing helps to make sure they’re cooked enough, all while still being super healthy!
I made these pineapple BBQ tofu skewers when I was craving something smoky and sweet that was also quick and easy, and these skewers definitely satisfy those cravings. I love that they can be thrown together in just a few minutes, and while I do recommend letting them marinate for at least 30 minutes, it’s not totally necessary if you’re in a rush.
Main Ingredients
Homemade barbecue sauce: I chose to make homemade barbecue sauce because I wanted to put my own spin on it, and I know not everyone always has barbecue sauce on hand. This smoky, sweet barbecue sauce is sure to be your new favorite. I like to keep a jar of it in my fridge for whenever the craving strikes!
Tofu: I recommend extra-firm tofu for this recipe so that the tofu doesn’t fall apart when barbecuing. Using a paper towel or cloth, try pressing out as much of the excess moisture before marinating the tofu to help it soak up as much flavor as possible. Tofu is packed with plant-based protein, iron and calcium, meaning it’s a great thing to be incorporated into your everyday eating pattern!
Pineapple: Pineapple brings a delicious hit of sweet freshness to this dish! I definitely recommend making sure your pineapple is ripe before cutting by trying to pull out one of the leaves. If it pulls out easily, the pineapple is likely ripe.
Vegetables: I used rough-chopped peppers, mushrooms and red onion on these skewers, but feel free to use whatever you enjoy! Just be aware that different vegetables have different cook-times, so try to stick to quicker-cooking vegetables.

Pineapple BBQ Tofu Skewers [Vegan + Gluten-Free]
Equipment
- Barbecue skewers
- Babecue (can also use oven)
Ingredients
BBQ Sauce
- 3 tbsp tomato paste
- 3 tbsp maple syrup or other sweetener
- 1 tbsp soy sauce
- 2 tsp smoked paprika
- 3/4 tsp hot sauce
- 1 tbsp apple cider vinegar
- 3/4 tsp garlic powder
- 3/4 tsp ground black pepper
Pineapple Tofu Skewers
- 1 block extra firm tofu
- 1 large pineapple large diced
- 1/2 large red onion
- 2 cups cremini mushrooms quartered
- 1 bell pepper large diced
Instructions
- Whisk together all BBQ sauce ingredients in a medium bowl.
- Using a paper towel or cloth, press out any remaining moisture in the tofu block. Cut tofu into 1½ inch triangles. Brush with homemade BBQ sauce on all sides and place in bowl. Let marinate for at least 30 mins, up to four hours.
- Once tofu has marinated, place on skewers with chopped vegetables and pineapple.
- Cook over medium heat on BBQ, rotating every few minutes, until vegetables are slightly charred and outside of tofu is cooked. Brush any leftover BBQ sauce on skewers, serve and enjoy!
